Taco Meatloaf

I found a pin on Pinterest for taco meatloaf.  I thought about making that version, but decided to make my own version.  It turned out really good.

Ingredients:
2 pounds ground beef
2 4oz cans of green chilis
1/4 cup of salsa
1 1/2 cups shredded mexican cheese
1/2 cup shredded mexican cheese for top
taco seasoning (My husband made the seasoning for me, the recipe is from all recipes, see the picture below)  You could probably use packaged taco seasoning.

Preheat the oven to 375.
I put all the ingredients in a big bowl except for the 1/2 cup cheese for the top.  Mix the ingredients all together.  Once it’s mixed, put it in a loaf pan.  (I personally love my pampered chef loaf pan)  Sprinkle the remaining cheese on top.  Cover it with foil and  pop it in the oven for about 90 minutes.  When it was done, I cut it into 7 pretty thick pieces.

We ate it with lettuce, sour cream, guacamole, olives, and salsa.  It was delicious!

1 serving = 371 calories, 21.1g fat, 4.3g carbs, .3g fiber, 39.2g protein

this is my hubby’s portion. I forgot to take a picture of mine before i mixed it up and it didnt look pretty anymore.
