Pop Challenge #3 Finds!

How did you do on my pop challenge?  I found some interesting recipes that I’m excited to try out.

Rosemary Parmesan Chia Seed Crackers  – These look pretty good and 4 crackers equals 6~ grams of fiber and 2~ net carbs.  Can’t wait to try these with some meat and cheese!

I really love cream of wheat and oatmeal.  That and mashed potatoes are my go-to food during ‘mushy/pureed’ days.  Unfortunately they don’t work with my low carb/keto eating plan.  But I found something that is supposed to be even better and will work.  18 carbs and 18 g fiber = 0 NET CARBS  Woot Woot.

Apparently I really like the blog ‘all day I dream about food.” because my last recipe is from there too.  It’s for Chia Seed Blender Pancakes that look really good, 2 pancakes have 6~ g of carbs and 4~ g of fiber. Total NET CARBS = 1~ g.

And now I am off to Amazon.com to buy some chia seeds!
